Lightly Smoked Salmon Croquettes

  1. Place Lightly Smoked Salmon in an air fryer or oven and cook to your liking, about 15-20m. at 375F. Allow to cool slightly and remove skin.
  2. Mash salmon in a medium bowl with a fork and add chopped onion, garlic, 1/2 cup breadcrumbs, hot sauce, pepper and 1 egg. Mix well until cohesive and you’re able to form into balls with your hands. Place in refrigerator before shaping them, for about 20 minutes.
  3. Form salmon mixture into golf-size balls and pre-heat your frying oil to 350F.
  4. Beat an egg in a bowl and place the remaining 1/2 cup bread crumbs in another shallow bowl. Dip each salmon croquette in egg and then into the breadcrumb. Allow the breadcrumbs to adhere to all sides of each croquette.
  5. Fry balls for about 2-3 minutes until golden brown.
  6. Place croquettes in a bowl or small platter and sprinkle with chopped chives or parsley. Serve next to some tartar sauce for dipping.
  7. Serves 2
