- Place Lightly Smoked Salmon in an air fryer or oven and cook to your liking, about 15-20m. at 375F. Allow to cool slightly and remove skin.
- Mash salmon in a medium bowl with a fork and add chopped onion, garlic, 1/2 cup breadcrumbs, hot sauce, pepper and 1 egg. Mix well until cohesive and you’re able to form into balls with your hands. Place in refrigerator before shaping them, for about 20 minutes.
- Form salmon mixture into golf-size balls and pre-heat your frying oil to 350F.
- Beat an egg in a bowl and place the remaining 1/2 cup bread crumbs in another shallow bowl. Dip each salmon croquette in egg and then into the breadcrumb. Allow the breadcrumbs to adhere to all sides of each croquette.
- Fry balls for about 2-3 minutes until golden brown.
- Place croquettes in a bowl or small platter and sprinkle with chopped chives or parsley. Serve next to some tartar sauce for dipping.
