- Pre-heat oven to 400F and line a baking sheet with parchment paper.
- Open thawed puff pastry and use flour to roll it into a 13 x 11 inch rectangle. Gently transfer it over to the baking sheet with parchment paper.
- Use the back side of a paring knife to score a border around the puff pastry, about 1/2-inch thick. Use a pastry brush to gently brush the border and heavily sprinkle it with Everything Bagel seasoning. Poke holes throughout the center of the puff pastry with a fork.
- In a medium bowl whisk together what’s left of the beaten egg with the mascarpone, lemon zest, dill, salt and pepper. Use a large spoon to spread the mixture onto the center of the puff pastry evenly.
- Bake for 18-22 minutes, until golden brown and allow to rest for 10 minutes before topping with smoked salmon and the toppings of your choice. Drizzle liberally with pomegranate molasses or lemon juice and serve.
