- Pre-heat oven to 425F and line a baking sheet with parchment paper.
- Add potatoes to baking sheet and drizzle liberally with olive oil and season with salt and pepper. Bake for 7 minutes.
- In the meantime, cut the stem off the broccoli crowns and discard. Cut florets into large bite-size pieces.
- Remove potatoes and carefully place broccoli throughout the baking sheet next to the potatoes. Drizzle more olive oil on top of broccoli and season with salt. Bake in the oven for 7 more minutes.
- Wipe salmon filets with a paper towel and season with your favorite seasoning.
- Remove baking sheet once more from the oven and nestle the salmon filets between the potatoes and broccoli. Drizzle salmon with a little bit more olive oil and place back in the oven for 7 to 10 minutes until salmon is cooked to your liking.
- Allow to rest for 5 minute before serving.
