Sheet Pan Pomegranate Salmon

  1. Remove salmon portions from package, wipe each with paper towel and set all four pieces throughout a greased large baking sheet.
  2. Trim ends of broccolini and peel any of the thicker stalks so they all cook evenly. Place broccolini between salmon pieces and season everything with salt and pepper.
  3. Pre-heat your oven at 425F.
  4. In a small saucepan add orange juice, brown sugar, pomegranate molasses, soy sauce, garlic and ginger. Allow to come to a simmer and cook until it reduces half way through and it has a thicker syrupy consistency.
  5. Allow to slightly cool and brush about 2/3 of the sauce liberally on top of each salmon piece. It’s ok if it spills off onto the broccolini. Drizzle everything with olive oil and place in the oven and partially cook salmon for about 10 minutes. Remove and brush remaining sauce on salmon and bake again until salmon is done to your liking.
  6. Serve on a platter and garnish with pomegranate seeds and chives, if desired.
  7. Serves 4.
