MOWI Smoked Salmon Latkes

  1. Use the coarse blade of a box grater or a grater attachment for your food processor to grate the potatoes and onions all in the same bowl.
  2. Place two or three large layers of paper towel or a clean kitchen towel on a cutting board and place the grated potatoes and onions on top. Wrap into a ball and squeeze out as much liquid as possible from it. Place it back into the bowl and add flour, egg and salt. Use your hands to mix together until fully combined.
  3. In a frying pan add about 1/2-inch frying oil and heat on medium-high heat. Form latkes as thin or thick as you like and begin frying on each side, until golden brown and crispy. Adjust heat to make sure the latkes do not burn.Place on a baking sheet in a 200F warm oven as you work in batches to fry the rest of the latkes.
  4. Serve latkes with sliced Mowi smoked salmon, creme fraiche and any of your desired toppings.
  5. Makes about 15 latkes
