MOWI Smoked Salmon and Cream Cheese Puff Pastry Cups

  1. Pre-heat oven to 400F.
  2. On a lightly floured surface carefully unroll the puff pastry with parchment paper. Cut 16 larger circles and remove outside puff pastry. Then cut inside of 8 of the large circle a smaller circle and remove the inside circle to reveal a ring.
  3. Brush the larger circles with egg yolk and place ring on top of each one. Use a fork to poke holes in the center of the circle and finish brushing more yolk on top of ring.
  4. Bake in oven for 18-20 minutes, until puff pastry rises and is golden brown. Carefully press the center circle of each puff with your fingers to form a “cup”.
  5. In a medium bowl mix whipped cream cheese with chives, lemon zest, lemon juice, salt and pepper. Place in a piping bag or resealable plastic bag and clip the corner.
  6. Begin filling each puff pastry cup with cream cheese and top with slices of MOWI smoked salmon and any topping you prefer.
  7. Makes 8 puff pastry cups.
