- Pre-heat oven to 400F.
- On a lightly floured surface carefully unroll the puff pastry with parchment paper. Cut 16 larger circles and remove outside puff pastry. Then cut inside of 8 of the large circle a smaller circle and remove the inside circle to reveal a ring.
- Brush the larger circles with egg yolk and place ring on top of each one. Use a fork to poke holes in the center of the circle and finish brushing more yolk on top of ring.
- Bake in oven for 18-20 minutes, until puff pastry rises and is golden brown. Carefully press the center circle of each puff with your fingers to form a “cup”.
- In a medium bowl mix whipped cream cheese with chives, lemon zest, lemon juice, salt and pepper. Place in a piping bag or resealable plastic bag and clip the corner.
- Begin filling each puff pastry cup with cream cheese and top with slices of MOWI smoked salmon and any topping you prefer.
