- Thoroughly season salmon portions on all sides with salt and pepper.
- Heat butter and oil in a large cast iron skillet, place salmon portions in the skillet, skin side first, and cook for 5 minutes on each side Remove from the skillet and set aside. Cooking times vary, cook until internal temperature reaches 145◦ F.
- In the same skillet add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper, and garlic and cook for about 4 minutes.
- Add baby spinach to the skillet and season with a pinch of salt and pepper. Mix until the spinach wilts down.
- Add cream cheese, cream, and parmesan cheese. Mix well until the cream cheese is melted and you get a creamed spinach-like texture.
- Serve on a plate one salmon portion with creamy spinach as a side.
