Microwave Salmon with Couscous

  1. In a microwave safe shallow bowl add couscous, chicken stock, spice packet and olive oil and mix. Season salmon filets and place in bowl and cover with a plate or lid. Microwave for 5 minutes on high and allow to rest for 5 more minutes before opening and checking for doneness.
  2. Remember that all microwave strengths are different, so you may have to microwave it a bit longer to achieve the your desired doneness.
  3. Fluff up couscous and serve with salmon.
  4. Makes 2 servings.
