Brown Sugar Roasted Salmon & Citrus Salad

This recipe is so easy you barely need a recipe at all! This yummy salad is easy and ready in around 30 minutesAdd to your weekday meal planning. Perfect for the 2 x 6oz Portions. 

Preparation

  1. Preheat oven to 375*
  2. Mix brown sugar, paprika, salt, pepper, thyme, and cumin in small bowl
  3. Rub spice mixture on Salmon, pressing in with your fingertips
  4. Heat oil in a large heatproof skillet over medium-high heat. Add salmon portions and cook for 5 minutes. Carefully flip portions and place pan in preheated oven. Roast 10 minutes or until salon is opaque and cooked through. Cool slightly
  5. When cool enough to handle cut salmon into chunks. Place fish over salad and serve with your favorite vinaigrette
