- Make the sauce by combining sugar, white vinegar, Sriracha, minced garlic and salt in a small saucepan and bringing it to a simmer. Allow to thicken for about 5 minutes and remove from heat. Once cooled down, mix in mayonnaise and set aside.
- Pat dry salmon fillet and cut into small bite-sized chunks. Season liberally with dry seasoning and place in air fryer or convection roast oven at 400°F. Cook until brown and crispy.
- Gently combine salmon bites with sauce and serve immediately with your favorite side.
