In a small bowl, balsamic, garlic, Dijon mustard, salt and pepper. Wisk everything together and slowly incorporate 1 tablespoon of olive oil at a time until having a creamy consistency. Reserve.
In a big bowl add all the baby kale, baby spinach, radish and red onions, and half of the toasted pine nuts. Mix the ingredients, serve the salad in two plates, top each plate with the Mowi Cold smoked Atlantic salmon and finish with the vinaigrette to taste, decorate with the rest of the toasted pine nuts.
