Mojito Tropical Cold Smoked Atlantic Salmon Salad (serves 2)

Preparation

In a small bowl, add the orange juice, lime juice, mustard, salt and pepper. Wisk everything together and slowly incorporate 1 tablespoon of olive oil at a time until having a creamy consistency.

In a big bowl add all the arugula, baby spinach, baby kale, mint, cherry tomatoes, pomegranate the orange supreme, the grapefruit supreme, and the cucumber. Mix the ingredients, serve the salad in two plates, top each plate with the MOWI Cold smoked Atlantic salmon and finish with the vinaigrette to taste. Enjoy.
